Ingredients:
3 tablespoons butter
1 medium onion diced
1-2 tablespoons minced garlic
2 tablespoons flour
1 tablespoon tomato paste
1/2 teaspoon each basil, oregano, onion powder, garlic powder, mustard powder
3/4 cup chicken stock
1 1/2 cup half and half
10 ounce can of diced tomatoes
4 ounce can roasted chilies
3-4 tablespoons cream cheese
1/3 cup parmesan cheese
20 ounce refrigerated ravioli
pinch of red pepper flakes – optional
In a large pan melt the butter over medium heat.
Add the onion and sauté till translucent.
Add minced garlic and cook 1 minute.
sprinkle flour over onions and mix together and cook for 2-3 minutes to get flour taste out.
Add tomato paste and cook for 2-3 minutes to caramelize.
Add in the herbs and mix well.
Pour in the chicken stock and half and half and stir to combine.
Pour the tomatoes and chilis in along with the cream cheese and stir till cheese is melted.
Add in the ravioli and parmesan cheese, stir to coat the ravioli.
Add pepper flakes if using them
Cover and let cook per package directions for time.
Remove from heat, stir and let sit 1-2 minutes to thicken.
