That is a sheet pan under a roasting pan with mixing bowls to hold food under decorative lamps(they aren’t even heat bulbs)and I told him “dude, if you have fried food hanging out for more than a minute in a bowl instead of going straight out the window then you’ve got some problems. This isn’t how you cook!” He said “well it’s just in case.”
Just in case what?? The hell do you think is going to happen over here?
He likes to put anti-skid pads under the smallest things too. Don’t do meth, kiddos!!

Is this dude just trying his best to be helpful and missing the mark, or is he in some position where he is expected to make these decisions? Looks like a nice and clean kitchen otherwise lol!

It’s still better than the margarine roux. Maybe he’s tapering?

Alcoholic kitchen bitch here. This is pretty dangerous because those mixing bowls are on a slanted steel surface with nothing keeping them in place or from being tipped over. If you are dumping and not saving oil your kitchen should already have a filtration and dumping set up in the bottom. Are you dumping cold oil from some kind of canned or bagged prep?
