I made this recipe as a spin-off from one I found online. I added the carrot and celery because it makes it more stew-like and hearty. Just make sure you’re cutting them thin & small!

Ingredients for a double batch (made in two pots at the same time, you get ~20 cups):
• 2tbsp olive oil (1 per pot)
• ~3tsp salt (1.5 per pot, I typically add small amounts throughout the recipe so that each major ingredient gets seasoned)
• a few carrots, peeled and chopped SMALL (smaller than the beans is a good rule)
• a few celery sticks, chopped SMALL
• 1 large yellow onion or two medium yellow onions, chopped small

• ~1kg extra lean ground beef

• 5tbsp chili powder (2.5 per pot)
• 4tbsp ground cumin (2 per pot)
• 2tbsp garlic powder (1 per pot)
• ~ 4tbsp tomato paste (2 per pot, can add more if you’d like. Can also add diced tomatoes if you’d like, I’m just not a fan of them)

• 1 can of chickpeas, drained & rinsed
• 2 cans of kidney beans, drained & rinsed
• 2 cans of black beans, drained & rinsed
• 8 cups beef broth (one terra pack per pot)
• a couple dashes of Worcestershire

Steps:
1. Have pots over medium heat & add the oil, 0.5tsp salt, & veggies, cook (stirring occasionally) until the onions are translucent and the carrots have started to soften.
2. Add the beef and 0.5tsp salt, break up the grounds and cook until there’s no visual raw pieces.
3. Add the spices, stir so that they’re evenly distributed and coating everything and cook 1-2 minutes. Add the tomato paste and stir, cook another 1-2 minutes.
4. Add the beans, the beef broth, Worcestershire, & final 0.5tsp salt. Stir. Bring to a boil, partially cover with the lid and turn the heat to low so that it’s simmering. Let simmer for 1hour+, until the chickpeas are soft. Taste/check periodically, add more salt if needed.
5. Portion into 1 cup containers. Refrigerate or freeze.

Because it’s so low cal, it can be a good snack or you can add grated cheese or other fixings! I really like using half a cup over nachos with raw onion, cheese, and hot sauce.

Btw, I use 1 cup deli containers I got off of Amazon. I know 1 cup sounds small, but it actually does fill up a regular bowl and is a great serving size. For context I’m 5’4”F.

    A guy sits down in a diner and asks for a bowl of hot chili… The waitress says, “Sorry, but the guy next to you got the last bowl”.

    He looks over and sees that the guy’s finished his meal, but the bowl of chili is still full. He asks, “Are you going to eat that chili?”

    The other guy says, “No. Help yourself”.

    He slides the bowl of chili over and starts to eat. When he gets about half way down, his spoon hits something. He looks down sees a dead mouse and immediately pukes all the chili back into the bowl.

    The other guy says, “Yeah, that’s about as far as I got, too”.
