In both of these recipe I used boxed cornbread, but you can use this recipe instead!
This recipe is also GREAT just as a side dish for any meal.
Ingredients
1 3/4 cup flour
1 1/2 cup cornmeal
1/2 cup sugar
4 1/2 tsp baking powder
1/2 tsp salt
1 cup buttermilk
2/3 cup sour cream
2/3 cup butter, plus 1 tbsp more for the top of cornbread
3 eggs
4 tbsp bacon grease ( 2 tbsp for the cornbread, 2 tbsp to put in the skillet. Replace with extra butter in the cornbread if you dont eat pork and use shortening in the skillet)
Note: Adjust the sugar based on personal preference
