
Turkey breast is really cheap near me after Thanksgiving so I was going to try making a turkey breast using Kenji’s [Herb-Roasted Turkey Breast and Stuffing](https://www.seriouseats.com/roast-turkey-breast-stuffing-recipe) recipe.
I was wondering if I could combine his technique with his NYT [mayo turkey](https://cooking.nytimes.com/recipes/1023623-mayo-roasted-thanksgiving-turkey-with-gravy) recipe and do a dry brine before cooking and substitute his herb mayo for the herb butter in the first recipe.
