This is one of my daughter’s favorite meals.
This series delves and focuses on Fish Dishes that I make for my family, who are pescatarians.
For this recipe :
– 200 gms Dried Anchovies
– 1 medium onion
– 3-5 Cloves of garlic
– 1 Tomato
– Pinch of Salt
– Mixed Spices and or Vegetable Cube
– 60 ml Coconut Milk
– 3 Tbs Olive Oil
Method:
1. Boil the Fish for 15 minutes, then drain it completely
2. Heat the Olive oil and then sauté the Fish, keep stirring and turning the fish until crispy.
3. Add the chopped onions and keep stirring
4. Add the Garlic and then the salt and spices if you choose to
5. Add the vegetable cubes & add chopped tomatoes
6. Keep turning the fish while it cooks, the tomatoes should turn into a sauce, add spices like masala mix and coriander seeds keep stirring then add a pinch of salt
7. Lastly add the 60 ml of coconut milk and simmer for a few minutes
8. Serve with ugali and vegetables.
I at times use dried fish or even deep fried fish for this recipe. The method to cook will be the same, except when the fish has already been deep fried you do not need to then boil it first.
