These delicious but oh so easy sour cream chicken enchiladas are a hit at my house. I don’t make these nearly enough according to my family.   2. Catherine, I put cream cheese in my enchiladas. Just add 2-3 dollops of cream cheese to each enchilada. You will not believe the next level of flavor it adds. Also, I have made several of your recipes & all of them have been absolutely delicious. Thanks for all your yummy recipes.

  5. I made these recently and they were very very very very good. VERY. I admit, didn't have the same cheese…used quesadilla cheese and cheddar.
    My dad is 93… and made a dish for the both of us. And without my having to ask him, he too said how really good they were. THANKS SO MUCH..
    nice change – wonderful change – from traditional, spicy, "usual" enchiladas. Just great. THANK YOU VERY MUCH.

  8. My Costco here in California in the meat dept has shredded rotisserie chicken. So easy, no bones, no skin vacuum sealed. When I get it home I package it in 2 cup serving & freeze until needed. Saves sooooo much time!!!

  9. These look really good,however, I would rather see the whole pan while you’re cooking instead of your tea kettle and lamp.
