I made three big-ish rolls (using the whole sheet of seaweed instead of half sheet) for about $6 for my and my husband’s lunch today. Only mine is shown in the photos, which I took after eating two end pieces of the avocado & cucumber roll.
3 seaweed sheets $0.90
2.4 oz smoked salmon $3
1 oz cream cheese $0.22
1/4 avocado $0.20
1/4 cucumber $0.42
About 240g short grain rice $1
Sushi vinegar – not sure, I didn’t measure it.
I didn’t use any recipe as all I needed to do was to season the rice and cut the other ingredients before rolling them in seaweed.

Pressed marinated tofu is great for sushi too, and way cheaper than salmon, if you’re near a Trader Joe’s they sell it already made too
