The baked zucchini fries are as delicious as French fries. If you love fries and are looking for a “healthier” version, oven baked zucchini fries recipe is for you!

Recipe: Crispy Zucchini Fries – Oven Baked

*Ingredients:*
3 medium zucchinis, about 200 to 230g (7 to 8.1 oz) each
65g (½ cup) of all-purpose flour/plain flour
95g (1 1⁄3 cups) of panko breadcrumbs
50g (½ cup) of grated parmesan
2 large eggs
1 teaspoon of paprika
2 teaspoons of herbes de provence
1 teaspoon of granulated garlic
1 teaspoon of cayenne pepper
1 teaspoon of salt
3 to 4 tablespoons of extra virgin olive oil

*Mayo, ketchup & garlic sauce*
1⁄3 cup (75g) of mayo
1 ½ tablespoons of ketchup
1⁄(8 ) teaspoon of garlic
1 teaspoon of lemon juice
Salt to taste

*Instructions:*
Wash the zucchinis and trim off ends. Cut the zucchini in half, cut each half lengthwise then cut into 3 sticks, 2 to 2 ½ cm (0.8 to 1”) thick. Remove the seeds from the zucchini sticks if there are any.
Line a baking tray with parchment paper and spray with olive oil.
To a bowl, add the flour, ½ teaspoon of salt and ½ teaspoon of paprika. Stir until combined.
In a second bowl, crack open 2 large eggs and beat.
To a third bowl, add the panko breadcrumbs, grated parmesan, herbes de provence, granulated garlic, cayenne pepper, ½ teaspoon of salt and stir until well combined.
Preheat the oven to 220 °C / 200 °C fan / 425F / gas mark 7.
Working one at a time, coat the zucchini with flour, dip in the eggs then coat in the breadcrumb mixture. Coat in as much breadcrumbs mixture as possible.
Place the zucchinis on the prepared baking tray. Drizzle with 3 to 4 tablespoon of extra virgin olive oil.
Bake for 15 minutes. Flip over the fries and bake for a further 15 to 20 minutes until golden brown.
Make the sauce by mixing all the sauce ingredients in a bowl.
Place the fries on a cooling rack and allow to cool down for 5 minutes.
Serve warm with the mayo, ketchup & garlic sauce. Enjoy!

*Notes/Tips:*
The zucchini fries are best served warm. If they get too cold, they will lose their crispiness.
Ground black pepper can be used instead of cayenne pepper.
Any other vegetable oil can be used for baking and spraying on the parchment paper.
