Macaroni and Cheese

1 pound large elbow macaroni
1 teaspoon salt
1 1/2 pounds Fiesta Blend Fine Shredded Cheese, divided
1 1/2 pounds Velveeta (grated or cubed – grated works better!)
1 (24 ounce) tub small curd cottage cheese
1 cup milk
1 cup half and half
1 stick butter, melted
1/4 teaspoon ground black pepper
1/4 teaspoon paprika

Preheat oven to 375°. 

Bring a large pot of water to a gentle boil with the teaspoon of salt added to it. Just before it gets to a rolling boil, add the macaroni, stirring frequently to prevent it from sticking together. Cook the macaroni to the al dente stage.  Drain the macaroni well.

While the macaroni is boiling to the al dente stage, mix together 4 cups Fiesta Cheese, the grated Velveeta, cottage cheese, milk, Half & Half, butter, pepper, and paprika in a large bowl. 

Place the well drained and hot cooked macaroni into the bowl with all the other ingredients. Add more milk, if necessary, to make it the creamy texture you desire. Pour all the ingredients into a baking dish that has been sprayed with nonstick spray. Top with the remaining 1 1/2 cups of Fiesta Blend Shredded Cheese. Bake in your preheated oven for 40 to 45 minutes or until it bubbles and it’s lightly browned. 

NOTE: if desired, omit topping the casserole with the additional cheese  and instead top it with a combination of one sleeve of crushed Ritz crackers stirred together with one stick of melted butter.

  1. I just made a different recipe mac & cheese using 16 oz box of macaroni, no velveta, no cottage cheese but about the same amount of shredded cheese, milk & butter and served 8 people. It was delicious and we had a lot left over, so with your added ingredients, how many would it serve. Mine could have served 12 people, so I'm thinking your recipe would feed 16 people. Does that sound right? Thanks for all your recipes. We had your breaded tomatoes on Thanksgiving.

  3. I am not a fan of cottage cheese so my question is, what happens to the curd? Wonder if it could be blended prior to adding. That’s a hack used before to make it smooth.

I have to admit I was skeptical about the Velveeta but your presentation was very convincing so I got all the ingredients and just made it this evening. Wow!   12. Good morning Tom & Melissa, I do chuckle when you explain the ingredients that you use for the recipe. As you have made the recipe before, you just know these are the good things in life!. Well the macaroni bake sure looks delicious. Just that extra ingredient makes the world of difference. The cottage cheese is healthy, therefore, it balances with the rich cheeses and the half and half, but as you say, we do not eat this everyday, so make it good and enjoy. I love the 4 cheese selection in the packet, wish we could have those, but it is what it is. I use to buy the American Woman's Day magazine, but had to stop it as the import duty was so high, it really became unaffordable, but I do remember the adverts for the products you use in your baking/cooking.   18. I made this tonight to go with meatloaf and roasted beets. It turned out excellent! The recipe is very close to the one I make, and yes, I also use Velveeta. Can't make good mac and cheese without it. The cottage cheese was a new one on me and it is now a keeper! I grated my own cheeses, varieties that I like. I'll have to portion some out and freeze it because I know I won't be able to stay out of it. Once again, a great recipe!

  20. For people who don’t trust the cottage cheese to melt, you can put it in your food processor and make it creamy before adding it into your cheese mixture.

  22. I tried this, and it was just as creamy and delicious as you said. I could still see the cottage cheese, which didn’t bother me a bit. But if you think it might be off-putting to anyone, it would be simple enough to add it to the milk and half-and-half and give the whole thing a quick turn in the blender or food processor. The immersion blender might be easiest of all: same content and flavor, no lumps. Voila!
