“Potato-filled Hingel: Savory Turkish Dumplings”
Ingredients:
For the Dough:
– 2.5 cups of all-purpose flour (320g)
– Approximately 1/2 cup of water (about 100ml)
– 1 teaspoon of salt
– 2 eggs
For the Filling:
– 4-5 boiled potatoes
– 1 onion
– 3-4 tablespoons of vegetable oil
– 1 teaspoon of tomato paste
– 1-1.5 teaspoons of salt
– 1 teaspoon of red pepper flakes
– 1/2 teaspoon of black pepper
Additionally:
– 2 tablespoons of butter
– 1 teaspoon of red pepper flakes or paprika
– Garlic yogurt for serving
Instructions:
For the Dough:
1. Mix the ingredients for the dough until you have a firm, non-sticky dough. Add water carefully, as the amount needed may vary depending on the size of the eggs. Adjust the dough’s firmness when pressed.
2. Cover the dough and let it rest.
For the Filling:
1. In a pan, sauté the onions until they turn pink. Add the tomato paste and continue to sauté. Add the mashed potatoes and spices, mixing well.
Assembly:
1. Divide the dough into two equal portions.
2. Roll out the first portion on a floured surface using a rolling pin until it’s thin. Use a teacup to cut rounds from the rolled dough.
3. Form the potato mixture into small balls and place them in the center of each dough round. Fold the dough over the filling and press the edges with a fork to seal. Place the hingels on a floured surface or a tray, covering them with a cloth to prevent drying out.
4. Repeat the process with the second portion of the dough.
Cooking:
1. Boil water in a deep pot, adding salt. Boil the hingels for 4-5 minutes until they float to the surface. You may need to do this in batches if your pot is not large enough.
2. In a large pan, heat the butter and add the red pepper flakes or paprika. Stir.
3. Transfer the boiled hingels to the butter mixture and coat them well.
4. Serve the hingels with a drizzle of garlic yogurt.

“Savory Stuffed Cabbage Rolls – A Delightful Turkish Dish”
Ingredients:
– 1 medium-sized cabbage
– 1.5 cups of rice (300g)
– 1/2 cup of fine bulgur (100g)
– 1 onion
– 1 tablespoon of red pepper paste
– Slightly less than 1/3 cup of vegetable oil (80ml)
– 120-150g of ground beef or finely chopped meat
– Finely chopped parsley
– 1.5 teaspoons of salt
– 1 teaspoon of black pepper
– 1 teaspoon of red pepper flakes
– Optional: 1 teaspoon of dried mint
For the Sauce:
– 4-5 tablespoons of vegetable oil
– 1 tablespoon of tomato paste
– 400ml of water (2 cups)
– A pinch of salt
Instructions:
1. In a pan, sauté the chopped onions in vegetable oil. Add the red pepper paste and continue to sauté.
2. In a deep bowl, place the rinsed rice, bulgur, and the sautéed onion mixture, along with other ingredients. You can also add ground beef or chopped meat if desired.
3. Cut out the tough core of the cabbage and blanch the leaves for about 50-60 seconds, just until they become pliable. Be careful not to overcook to maintain their integrity. Note: It’s easier to blanch the whole cabbage in boiling water and then separate the leaves individually.
4. Trim the thick vein parts from the leaves and cut them into the desired size for rolling.
5. Place some of the filling inside each cabbage leaf and roll them, optionally folding the sides inward to seal. Arrange a few cabbage rolls at the bottom of the pot.
6. In a separate pan, sauté the vegetable oil and tomato paste. Add 350ml of water, season with salt, and stir. Pour this sauce over the cabbage rolls until they are nearly covered, adding more water if needed to align with the rolls’ level.
7. To prevent the rolls from falling apart during cooking, you can place a plate over them.
8. Cover the pot, reduce the heat once it starts to boil, and simmer until the cabbage rolls are tender. This takes about 40-50 minutes.
