1tbsp Yellow Bean Sauce
30g Ginger
30g Garlic
4g Star anise
1.5litres Water
70ml Chinese red vinegar
3tbsp Maltose

Tried your recipe today, overall it was great the flavour was good. Things I would do differently is that your measurements yielded way too much seasoning and marinade than the duck could take which ended up with very strong stuffing.
Where do you get the wire prong or rack to elevate the duck on the pan from?
