Slow Cooker Instructions:
1. If your slow cooker has a sauté function, or if you prefer to cook the meat beforehand, heat a bit of olive oil and brown the ground meat with the onions and garlic. If your slow cooker doesn’t have this function, you can do this step in a skillet. 2. Transfer the browned meat, onions, and garlic to the slow cooker if you used a skillet. 3. Add the diced carrots, bell peppers, kidney beans, and diced tomatoes to the slow cooker. 4. Season with chili powder, cumin, paprika, cayenne pepper, salt, and black pepper. Stir to combine all the ingredients well. 5. Pour in the broth and stir again. 6. Set your slow cooker to low and cook for 6-8 hours, or on high for 3-4 hours. 7. Check the seasonings before serving and adjust to your taste if necessary.
