Recipe for 8″ cheesecake:

Graham Cracker:

Graham cracker crumbs: 140 grams
Butter: 90 grams
Granulated sugar: 10 grams
Ap Flour: 10 grams

Cheesecake Batter:

Cream Cheese: 380 grams
Mascarpone: 250 grams
eggs: 100 grams
Sugar: 220 grams
Vanilla Bean: 2 each
