    I made carne guisada last weekend and holy shit it was so good and also really easy. My meter for good guisada has been raised.

    Carne guisada is by far the most underrated of the common Tex-Mex dishes.

    I am not driving across town to eat that particular carne guisada, but the point remains.

    Open question after this came up in discussion with some friends: What would you say the “essential” flavors of good carne guisada are? Like it can have a bit of chile, but too much and it basically becomes chili. Similarly, if you go too light/basic with the seasoning, it’s basically just plain brown gravy. So what flavor do you think of when you think great carne guisada? Garlic, cumin, and Mexican oregano?
