    I made this too.

    My omelettes have been tasty, insofar as they’re runny and yellow without browning, but they tear.

    I cranked the heat up (luckily someone had already used the pan as I waited for the bacon to cook in the oven), so the pan was hot before the room-temperature butter went in.

    I might be able to reduce the butter a little bit (I used a fairly alarming amount…). Voilà, the edges set quickly, and I was able to roll it out kind of sort of in a way that made it look nice enough for internet points.
