There is nothing like refreshing and tasty bruschetta on crispy garlicy bread! (topping it with Bomba Calabrese is optional. However, if you like spicy, I highly recommend this tasty condiment!!)

BASIC BRUSCHETTA
***Makes 4 servings

*Ingredients:

½ baguette, thinly sliced or cut in
5-inch pieces
1-2 garlic cloves
3 tablespoons (45 ml) olive oil
3 tomatoes, small dice
1 shallot, finely chopped (or 1/4 onion)
1/2 cup (125 ml) fresh basil, chopped
2 tablespoons of chopped parsley
2 teaspoons (10 ml) balsamic vinegar
Salt and pepper

*Instructions:

With the rack in the middle position, preheat the oven to 180 °C (350 °F). Place the bread slices or pieces on a large baking sheet. Toast in the oven for about 10 minutes or until lightly browned. Let cool on the baking sheet for 5 minutes, then rub garlic clove onto top of toasted bread and set aside.

Prepare your tomatoes. Here is the technique to seed a tomato (remove the seeds!). Cut the tomatoes into quarters. With your thumbs, pull out the juice and seeds from the tomatoes and cut the flesh into small dice.

In a bowl, combine the tomatoes, chopped shallot (or onion), basil, balsamic vinegar and the olive oil. Season with salt and pepper. For best results, leave in fridge for a few hours or overnight. Spoon the tomato mixture onto the toasted bread.

***Recipe can be easily doubled or tripled***
