– 3 red bell peppers
– 1 eggplant
– 2 garlic cloves, minced
– 1 tablespoon olive oil

– Directions:
1. Preheat the broiler to high.
2. Place red bell peppers and eggplant on a baking sheet and broil, turning occasionally, until the skin is charred and blistered.
3. Remove from the broiler and let cool. Peel off the blackened skins.
4. In a food processor, combine the roasted peppers, eggplant, minced garlic, olive oil, lemon juice, salt, and pepper.
