In this episode, I’ll be using a whopping 7 kilograms of beef shank to create a versatile base that will serve as the foundation for a variety of scrumptious dishes.

I’ll start by seasoning and browning the meat in olive oil, infusing it with rich flavors. Afterward, we’ll sauté 6 onions and 6 cloves of garlic in the remaining meaty juices, adding a medley of chopped celery, 3 leeks, 4 carrots, and a touch of red chilies (3) for that perfect balance of taste and heat.

Once the veggies are tender and aromatic, I’ll reintroduce the shank pieces, along with two bottles of wine to deglaze the pan and let the alcohol evaporate. Next, a jug of concentrated beef broth and three tablespoons of tomato paste will join the mix, along with fragrant bay leaves, thyme, and fresh rosemary. We’ll cover and let this exquisite concoction simmer over low heat for a tantalizing three hours.

When the time’s up, we’ll carefully set aside the meat and bones, leaving behind the remains of the herbs. These remnants, brimming with rich meaty flavor, will later become the star of our delectable croquettes. But first, we’ll transform the rest into a silky-smooth sauce using a food processor. To achieve that perfect consistency, we’ll strain the sauce, ensuring it’s free from any lingering vegetable bits.
