I make this recipe a couple of times a month because it’s so cheap and good.

It’s less than $1/serving, using prices from my local Walmart. I’m vegetarian, so I don’t include the ham, but even if you did, I’m sure it would still be super cheap!

I like to add some frozen or canned corn to the soup. Sometimes I put the spinach in, sometimes not. Green onions are a nice garnish. If you don’t have lemon juice, vinegar works great and is cheaper. The soup freezes great.

I usually have this soup with rice and hot sauce, and get 8-10 good servings out of it.

If you don’t have an Instant Pot, there are also slow cooker recipes on the Hurst’s website.

One last tip: the “Cajun” flavor of Hurst’s is usually cheaper than the “ham” flavor. Both flavors are vegan. 😆
