This is a super easy old school recipe for Corned Beef Hash. It is a classic comfort food that is easy to make and if done right it is outstanding!!

Ingredients: 1 can corned beef, 2 russet potatoes, 1 onion, 2 eggs. Spices (Salt, Pepper, Garlic powder, Paprika, Parsley flakes)

Peel then cube your potatoes into about 1/2 inch cubes. Dice your onion pretty fine. Cook your potatoes in some oil and season with salt, pepper, garlic powder and paprika to taste (about 1 tsp each) until they are crispy on the outside and soft in the middle. Add the onions about 2 minutes before the potatoes are done. Put your corned beef next to your potato/onion mixture and break up/heat up through. GENTLY combine the potatoes and corned beef so you don’t mash up your potatoes. Let cook on medium heat and flip every 3-4 minutes until the outside of everything is nice and crispy. Cook a couple of sunny side up eggs and enjoy the experience. It is SOOOO GOOOOD!!!!

  8. I like cooking taters like this with the small red potatoes from Publix and cut them small and cook them with 3 spoons of unsalted butter and oil. They get crispy and then at the end drop some shredded cheese and serve with eggs.

  9. That stuff looked great. I have made similar camping. But when we cook the egg we stir it up like you would if making scambled eggs & just cover the top of the hash with it & let the egg cook on top of the hash. This way you get the egg with every bite of the hash. But I bet those fried eggs with the yolk running into the hash was fantastic.

  14. I made this tonight, but somewhat different. I sautéed chopped onion, added the corned beef hash, then added baby spinach, made 3 wells, added eggs, covered with a lid to steam for “easy over” eggs. It was delicious for supper.
