Have you struggled to cook tender octopus? Do you end up with a rubbery, chewy chunk? Well follow along while I show you how I like to prepare and cook my octopus. We are also going to be taking some of the octopus ink and making ink pasta. Octopus has some beautiful meat, flavoured by a diet of crustaceans it is sweet and tender when prepared right. The skin is beautifully gelatinous soaking up flavours of whatever it is cooked with and if it tickles your fancy crisping up over coals etc later on.

Fantastic video mate. Really cool technique adding the ink to the eggs, I would have never thought of that. Sometimes in the Mediterranean countries you get risotto con sepia which is generally the cuttlefish ink mixed in with the risotto. Gets a bit heavy at times so this looks like a great way to utilise the ink.
