Temp: 130°F

Cook Time: 15 hours

Rest: 2 hours at room temperature

Reverse sear: In ghee @ 350 turning every 30 seconds

Allow to cool, wrap in plastic and foil, refrigerate overnight. Slice thin, season well, and I highly recommend a creamy horseradish & parmesan cheese sauce.
