Moroccan Chickpea and Vegetable Tagine:
Ingredients:
– 1 cup chickpeas, soaked overnight and cooked
– 1 onion, diced
– 2 cloves of garlic, minced
– 1 carrot, sliced
– 1 zucchini, sliced
– 1 bell pepper, diced
– 1 tomato, diced
– 1 tablespoon olive oil
– 1 teaspoon ground cumin
– 1 teaspoon ground turmeric
– 1 teaspoon ground coriander
– Salt and pepper to taste

Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook until translucent.
2. Add the spices (cumin, turmeric, coriander), salt, and pepper. Stir well to coat the onions and garlic with the spices.
3. Add the carrots, zucchini, bell pepper, and tomato to the pot. Stir to combine.
4. Add the cooked chickpeas and enough water to cover the vegetables. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the vegetables are tender.
5. Serve the tagine hot with a side of couscous or quinoa for a nutrient-packed meal that promotes healthy skin.
