
I used to live in Philly. a recidivist, i still often crave a cheesesteak. When i go to wimberley i stop at The Let Go for a cheesesteak and a frito pie. The cheesesteak is the best i’ve had in texas. i recall my moments alone w cheesesteaks of the past; sweaty, supple. i was young. the bread is spot on: soft, damp, a little chewy, but firm enough to give the sandwich some bite. steak is well seasoned, and the ribeye pieces are well browned (rather than rubbery and steamed on a crowded flattop). steak and cheese form a perfect homogeneous mixture. no bites lacking cheese.
