Ingredients

– 600 ml Thickened / Heavy or Regular Cream
– 1/4 cup sugar + toppings
– 1 pc vanilla bean alternative is vanilla bean paste
– 6 pcs egg yolks
– Raspberries (optional)
– Blueberries (optional)
– Icing sugar (optional)
– Mint (optional)

Infusing the Cream
– Begin by heating the thick cream in a saucepan over medium heat. Split the vanilla pod lengthwise, scrape out the seeds, and add both the pod and the seeds to the cream. Allow the mixture to simmer, allowing the vanilla to infuse its fragrance into the cream. Once done, set it aside to cool slightly.
– If you are using vanilla bean paste you can skip this step.

Custard Base
– In a separate bowl, whisk together sugar and egg yolks until the mixture becomes pale and slightly thickened. Gradually pour the infused cream into the egg mixture, whisking continuously to ensure a smooth consistency.
– If you are using Vanilla Bean paste, just combined all the ingredients together.

Baking the Custard
– Pour the custard mixture into ramekins and place them in a water bath in the oven. Bake until the custard is set with a slight jiggle in the center. This slow, gentle cooking process is key to achieving the desired silky texture. 120°c for 60mins or more depends on the size of your ramekin.

Caramelizing the Sugar
– Once the custards are chilled, sprinkle a thin, even layer of sugar on top. Torch the sugar until it caramelizes, creating the iconic crackling crust that defines Creme Brulee. Serve with berries, mint leaf and a dusting of an icing sugar.
