I’ve been on the no-lime train ever since I’ve heard that’s how a lot of Mexican chefs feel about it and then tried it myself. While I’m all for acid in almost every dish, lime drowns out the rich flavor of avocados. Acid cuts through fatty flavors, but avocado is so fatty that it works against the flavor profile that makes guacamole shine. Properly seasoned guacamole without lime is the best way to do it in my book.

I’d definitely add cumin, more tomato, and fresh chili (jalapeno or serrano) and not powdered. Then just mix it together leaving some texture and it will have a much better mouth feel and taste fresher as well.
