I wanted to make Sasha Marx’s [koji prime rib recipe](https://www.seriouseats.com/koji-prime-rib-recipe), but I didn’t get my koji until today and according to the [koji recipe on the website](https://www.seriouseats.com/shio-koji-marinade-recipe) it’ll take 7-10 days to ferment… plus I need to let the prime rib sit in the koji overnight. It’s only five days until Xmas dinner, so I don’t have enough time right?

I have purchased ready to use koji in the refridgerated section of asian grocery stores. Is that an option?
