I’m looking at Kenji-Lopez’s recipe (below) and it says…

>_Meanwhile, preheat oven to highest possible temperature setting, 500 to 550°F (260 to 288°C)._

…and I just wanted to double check that the oven should still be on “BAKE” and not “BROIL”. My first thought was it should be on broil but it doesn’t say so explicitly.

    Broil means the highest possible temp coming from the TOP of the oven, meaning the top coils in your oven are at full blast and that’s it. Setting your oven to the highest temp possible means the whole oven will reach that temp and not just the top.

    So no, don’t broil, set your temp to the highest it can go.

    I learned I could trick my oven into getting hotter by preheating to 500° and then turning the broiler on. I could get a bit over 600° with that oven for baking pizzas. That wouldn’t be good for prime rib. Just to go the 500° that the oven goes too. Or whatever. Not broil.
