How to Low Carb Mediterranean Chicken Bowl Recipe

This is how to make lemony, garlicky Mediterranean chicken – you can grill these, but they’re just as good on the stovetop if you don’t have a grill. I served them with my 10-minute pickled red onions, black olives, and feta.

Here is how to make it:

1. We’ll start by marinating the chicken. This is key. We’re going to use lots of lemons, olive oil, and garlic. Start with 1.5lb to 2lb of your favourite cut of chicken, and add it to a bowl. Add in 4 tablespoons olive oil, the juice and zest of 1 large lemon, 4-6 minced garlic cloves, 1 tbsp oregano or thyme, a couple of pinches salt and pepper. Mix it really well. Then let it soak up the flavors, for at least 2-3 hours, but ideally overnight.

2. When you’re ready to make the chicken, you can either grill them, airy or make it on the stovetop. I just got a pan to medium heat, added a tablespoon of oil, and cooked them through till nice and golden.

3. To make the pickled red onion, thinly slice a large red onion and mix with 2-3 pinches salt, 1.5 tbsp of sumac, the juice of 1 large lemon, and 2 tbsp fresh parsley. Mix well, then let it sit for about 10-15 minutes, stirring a couple of times along the way.

4. I made a feta Greek yoghurt sauce by mixing 1/2 cup thick plain Greek yoghurt, 1 ounce crumbled feta, 1 finely minced garlic clove, the juice of 1/2 lemon, a couple of pinches salt and pepper, and 1/2 tsp oregano. Mix well, taste and adjust.

5. Then plate everything up. I put a couple of tablespoons of the yoghurt sauce at the base and added the chicken, pickled sumac red onions, and black olives. Top with crumbled feta, fresh chopped parsley, and sumac.

Serve this as is, with your favourite base (quinoa, rice, low carb rice, cauliflower rice), or even as a salad.
