I love making quiche, because I love eggs. I love scrambled eggs, omelets, fried eggs, poached eggs, boiled eggs and yes, quiche. This one is filled with spinach, bacon and swiss cheese. It’s heaven. Just make it.

Pie Crust:
Mash together 1/2 cup butter, 1 1/2 teaspoon sugar and 1/2 teaspoon salt. Add 1 1/2 tablespoon milk and 1 egg yolk. Mix until sloppy and add 1 cup flour. Once it starts coming together wrap in plastic and chill for 1 hour. Roll out and line a pie tin. Bake at 375° for 20 minutes.
Filling:
Sauté 1 lbs spinach until it reduces down to nothing. Fry 4oz of bacon until crispy. In the bacon fat sauté 1 small onion. Grate 5oz of swiss cheese.
In a medium bowl whisk 3 eggs with 1/2 teaspoon salt, 1/4 teaspoon pepper and a pinch of nutmeg. Lastly whisk in 1 1/2 cup cream. Set a side.
Assembly:
In the partially cooked pie crust, place a layer of swiss cheese, save a little for the top. Next add the crispy bacon and onions. Evenly distribute the drained spinach on the top and pour the egg mixture into the pie tin. Top with the remaining swiss cheese. Back at 375° for 40 minutes. Serve hot or warm.
