  2. the mayonnaise on a burger could use some flavour. mixing it with some shredded lime shell and lime juice and some crushed garlic, makes it a nice aioli sauce.
    just plain mayo tastes kinda bland

  4. i hate the taste of mayo, outside of a very few specific things…
    I instead make a dressing using high fat creme fraiche, salt, pepper, garlic, very finely diced shallots (as fine as if you grate them), and either a bit of vinegar or a bit of mustard, turn that with an equal amount of freshly whipped cream and it's great!

    i do like raw onions in burgers and on hotdogs… but i prefer pickled red onions for both, which i of course make myself!

  6. I like to let the bun rest a bit before I dress it which helps keep it from getting soggy. Also keeps some of the moisture in the bun to keep it from tasting stale, that's just me but give it a try, what do you think? If you're gonna use raw onions in your burger make them super thin so they almost melt into the hot burger when placed on top, that way it's not a super oniony flavor just a little to add to the burger.

  7. He does not make the best burgers. And he exclusively makes them taller than the ones he criticizes for being too tall to bite as if he doesn't remember how to eat. He's a snake oil salesman.

  8. I have a huge problem with Gordon Ramsey's burgers. They are too damn tall. You have to smash them down so far to take a bite that you squeeze toppings and all the juice out of the burger patty. It's not enjoyable to me because I am not a python that can dislocate my jaw to take a bite. I love a good pub style burger that has a single thick patty, but Gordon's are just too much. For this reason, when I cook burgers myself, they are always smashburgers instead. They cook faster, and they are difficult to overcook. Even a smashburger cooked well done will still be juicy and tender.

  9. For burgers, and sandwiches, I never got into the massive ones. Putting 10 layers on it but only being able to bite into 5 of them defeats the purpose of putting 10 things into it

  10. My tip for Mayo: put Mayo at the bottom and put your tomatoes on top of it. Mayo+Tomato combine for an extra punch of flavor.

  11. He's a great chef, oh yea!! But Gordon needs to be Humbled abit, and understand there's people out there better than him or atleast can cook too. Instead of Roasting, why not give the same level of respect and get your point across like a normal Person. That's the only thing or 2 I can't stand about Gordon. However Could be worse, it could be the Italian Dude that doesn't most of the time taste the food and lets everyone know he's Italia but not a Chef at all..

  17. Try putting a slice of butter on the burger right before putting the cheese on. The cheese will melt and hold the butter in place to melt into the burger as it melts…

  19. 3:24 It also creates carcinogens. When cooking meat over an open flame you get exposed to two carcinogens HCAs (heterocyclic aromatic amines) and PAHs (polycyclic aromatic hydrocarbons) both of which have been observed causing changes in your DNA which increases your risk of getting cancer. However, if I remember correctly, this does not apply to sausages so hotdog lovers are fine. Although since sausages are processed meats they do still have the risk of causing colorectal cancer if you eat too many hotdogs.

  20. Gordon has been called out many time on various dishes. Having said that there are many great tips here. The only thing I can flaw him on this is that the burger is too tall. I make >300g burgers with homemade buns but thinner and wider. Makes them easier to eat.
