It’s my workhorse no-knead bread I use for weeknights:
825g bread flour
75g whole wheat
680g water
~18g salt
~15g active dry yeast
Mix it together without kneading, throw it in the fridge for a couple days, take it out to warm it up for 2-3 hours before you want to bake. Baked incredibly well in a cast iron pot on the fire– preheat the pot with some of the coals, and keep the lid on throughout.

I love wood fire cooking for that lovely slight smokey taste.
