Today we’re making homemade locks which is cured salmon in my opinion store-bought locks is usually expensive dry and overly salty so we’re making it at home and even better it’s an absolute Game Changer and only takes four ingredients you kick it off with a fresh center cut salmon fillet that’s soaked

In Soju or cooking wine to help get rid of any fishy odor Pat it dry then set it aside in the meantime combine equal parts salt and sugar which is the curing mixture evenly spread half the mixture on top of a piece of plastic wrap place the salmon skin side down then spread

The remaining mixture on the top and ins sides securely wrap it multiple times and place it in a Ziploc bag weigh it down with heavy objects and cure in the fridge for 24 to 48 hours keep in mind that the longer it cures the saltier it

Will be for me 24 hours is just right rinse then Pat it dry and what you’re left with is a delicious silky moist and melting your mouth locks I love this on a scallion cream tees Bagel like a true New Yorker but you can also enjoy it with salads pasta sandwiches and more
