Salt + Pepper + Msg > 36 hours in the fridge. Took out of the fridge 1h30 before cooking at room temp. Baked at 180F until it reached 126F, final temp 133F (2 probes) Rested 1h30 and broiled at 500F to sear. Results = delicious. Btw I didnt I would have posted it here else I would I have stepped up my “plating” game 😁

Broiled af 550*sorry, it was like 2cm from the oven element 😁
I really want to do this but my wife won’t eat steak that’s medium-well to well done and it would be an absolute waste to prepare it that way.
Nailed it. Perhaps try these next time:
-Truss to make the roast even more circular
-Montreal salt
