Seasoned with SPG and let sit for about an hour. Quick sear then let rest while I made and put the Parmesan herb rub on it. That included fresh grated Parmesan with rosemary and thyme with some prime rib rub seasoning and fresh garlic with olive oil. I did use a mustard blend as a binder( French’s yellow, stone ground and a Bavarian sweet) Then smoked with a small piece of apple wood at 300 degrees for about 45 minutes. Everyone loved it.
