Hey everybody welcome back to my bake like a pro YouTube channel in today’s really fun video I’m going to be making my amazing light orange fruit cake and you are going to love this recipe even if you don’t like typical fruit cake we’re going to need three cups of

Candied fruit this is 500 g 2 cups of raisins 300 g 2 cups of all-purpose flour or 300 G and this is also called plain flour a half a cup of salted butter 115 gam one cup of white granulated sugar 20000 g 1 and 1/2 cups of sliced almonds

150 g 1 and 1/2 cups of pecans this is 150 g and I have just lightly chopped them three large eggs a half a cup of orange juice or 125 g 1 teaspoon of almond extract 5 G and our last ingredient 2 tpoon of baking powder 10 G so those are the

Ingredients let’s get started for my first step I’m going to take a little bit of our flour doesn’t matter how much I’m just going to get that right in there and then I’m going to get the raisins in and our dried fruit our candied fruit and then we’ll get that in

There and I just want to coat all of this it keeps it from sticking together that looks good I’ll just pour these in and also peans and just mix it up this smells amazing I’ve got my almond extract over on the side and I can smell that and it smells really

Good so this is not your typical fruit cake it’s much lighter in texture in color as well and it’s really nice with the orange juice okay that’s good on to our next step we’ll take all of our white granulated sugar and get that into our mixing

Bowl and then our butter and my butter is salted if you don’t have salted butter you can add a little bit of salt half a teaspoon or so about 2 G bring my mixer into view here there we go I’m using a paddle attachment bring it down and then I’ll

Just get this going a little bit so at this point I want to cream the butter and the sugar [Applause] together so that’s been creaming for maybe 45 seconds and then to help with the creaming process I’m just going to add in my eggs and to make everything a

Little bit faster I have just cracked all my eggs before [Applause] get my little spatula just push everything Down we’ll get our second egg [Applause] in and then my third and final [Applause] egg okay I’d say that’s about a minute and a half of good mixing on high on this machine this is a quez and art stand mixer by the way so we’ve have our allpurpose flower here

And we’ve got our baking powder so let’s get that in there before we forget it and just give that a little bit of a mix there’s a lot of ingredients but this is an amazing fruit cake so that’s good I’m going to take about half of my flour

Here just want to go easy I don’t want to make a a mess and then just get that mixed in at this point now since we’re adding flour I don’t want to go quickly on the mixer nice and slow speed number one you can see it’s all coming together

Really nicely hopefully you can see that and that’s good like that and then we’re going to start adding in some of our dried fruit close it down [Applause] you can hear it’s a very thick batter so that’s good and what I’m going to do now is I’m going to take the almond

Extract I’m just going to add it to the orange juice and I’m going to get all of that in and just mix that in a little bit [Applause] okay that’s good and then just to make things really fast I’m just going to take the rest of

Our flour and the little bit of baking powder that we had in there I can just put the whole thing in here and just mix that around and then we can just add this to the mixer and that’s it for the recipe so you see by coating this it will keep

Everything more separated in the final cake so I’m just going to get everything in dropped a couple here get those in close it down speed number one just look to make sure that everything is incorporated and it looks really good so I’m going to stop it right

There we’ll open this up so you can see this part of the recipe very very fast so at this point my oven is preheated at 200 50° F which is 120° C and there is our amazing batter this here smells it smells so good and then

We’re just going to get it into our bunt pan what I’ve done here is I’ve just greased My Pan that’s a butter that I put in this time now we’re just going to get all this in here and make sure to grease your container your baking tin because you do

Not want this sticking so this is going to be going into a very slow low oven which is going to bake now for 2 and 1/2 hours and what you’re going to want to do is get some hot water and you’re going to put that into a little cake tin

And you’re going to place it on the same Rack or the rack below the cake and that’s just going to allow a little bit more moisture to build up in the oven while the fruit cake is baking not 100% necessary but uh you can try that that’s what I

Do so I think it’s a good little technique to follow use a spatula make sure you get all of those ingredients that you paid money for because everything is so expensive these days you want to use up every little bit that you have and then just use your spatula and just push

Down like this smooth it out because you don’t want to have edges that are a little sticking up that will burn so just use a spatula or whatever you have you can use the back of a large spoon and just go around and make it nice and

Smooth so there we go that looks pretty good so at this point I’ll see you many hours later I am putting this into my 250° Fahrenheit oven or 120° cus so what you want to do is get yourself a cake tin boil some water fill

It up about a quarter of the way and you want to place this into the oven beside or just below the fruit cake and this is just going to allow a little bit more moisture to be inside the oven while the cake bakes so that’s it off to the oven

And I’ll catch you a little bit later hey everybody I’m back I baked my fruit cake for exactly 2 and 1/2 hours at this point it has been sitting here for about 45 minutes I can touch it here I’m not going to burn my hands but it it

Is still extremely warm I took my spatula and then I just went around to get a clean brake I want this to be nice when it comes out so you just want to make sure that you’ve gone around just to release it from the side of the

Pan so we’re going to get this on here and then we’re going to do a little flip there we go and I just heard it pull itself down and here we go look at this oh wow that looks amazing and it smells really good that looks amazing perfectly baked you can see all

Of that nice Candi fruit and the nuts yeah very very nice so at this point this cake is very warm still it needs to cool down for many many hours so that’s what I’ll do and then we’ll cut into a piece later on hey everybody we’re back it’s a

Couple hours later and now I want to slice into this to show you what it looks like inside oh this is going to be good look at that oh oh that looks awesome look at this that is really nice of course I am going to have to go in for a little taste

Test let’s just see how look at this oh really really nice all right going in for a bite M oh that is good this is really really good yum let’s give it a little spin here you can see this makes a very large cake so there we have it if you don’t

  1. So glad that you posted this recipe😊. I have a nut allergy however I can eat almonds, I have been looking for a fruit cake recipe that I can use that doesn't have pecans. or walnuts. I have all of needed ingredients in my pantry except the candy to fruit. I can't wait to try this recipe. 😍 Do you think it would be okay to add some extra raisins instead of the pecans?
