Looks the same as Finnish “riisipuuro” but usually it’s served with cinnamon and sugar, no butter. And for Christmas one almond is hidden in the porridge and whoever gets it will get married the coming year (or if they are married they’ll get to do the dishes…).

**Recipe**
Didn’t expect to get so many requests for the recipe, but here goes:
Serving 4:
* 2 1/4 dl rice* * 2 1/2 dl water * 1 L milk * Salt
For serving:
* Sukker * Cinamon * Butter
Directions:
Bring the water to a boil. Add the rice and boil it for about 2 minutes.
Let it cool a bit before adding the milk bit by bit while stirring. Letting it cool a bit helps prevent burning.
Let it simmer at a low heat with regular stirring for 30-35 minutes. Take it off a little before it reaches the consistency you want.
Taste for salt.
Mix sugar with cinnamon. I usually grab a cup, pour in some sugar and then add cinnamon and stir it until it has a colour I like.
Serve in bowls with cinnamon sugar on top and a clump of butter.
*In Denmark, you can buy specific ‘pudding rice’, which, as far as I can tell, is some form of short-grain rice. I have made it with normal rice as well, though.
