An Italian guy I worked with told me a recipe in 2018 and I can’t find what it’s called or remember how to make it. I remember you chop vegetables very finely and pour salt over them to let the water out, I have a picture of it after it was made!
If anyone can tell me the rest of the recipe or what it’s called I would really appreciate it as I remember it was delicious!!

This is a total shot in the dark so I’m sorry….
But could it be a kind of hot pepper relish?
It looks like chopped Giardiniera, also known as Chicago Giardiniera.
I haven’t made it myself but if you search with those names there’s a lot of recipes.
I’ve never seen this in italian cooking, but it’s a lacto ferment. You can use any vegetables for the most part but famously sauerkraut is the main one you’ll see. It’s very common across lots of European cuisines.
Multiply the weight of your chopped veg of choice and water volume by 0.025 (2.5%), and that’s how much salt you use. I like to gently heat the water to help fully dissolve the salt. Leave it for a week or two in a ferment container and make sure that everything is covered.

It looks like fermented/pickled vegetables
That’s a type of giardiniera called muffaletta, it’s a sandwich spread with is essentially vinegar fermented finely chopped vegetables. Looks like he used a food processor which is a-ok
