













First time using hot honey. As you can see by the last pic, I bought a small jar of Mike’s hot honey. I wasn’t sure if I would like it and didn’t want to buy a big bottle and then have it go to waste. I’m just thankful they had it in a small size. The question I have for everybody here, how much do you put on your pizza? I guess I didn’t like it so sweet. I drizzled it in a spiral from outside to middle. Any advice would be appreciated!
Hand sliced pepperoni, my own tomato sauce (see last week’s post – made with San Marzano tomatoes), parmesan, asiago, low moisture whole milk mozzarella. Heated pizza steel for 45 minutes at 500F, 30 minutes on high broil. Continue on high broil. Slide pizza onto steel via parchment. Remove parchment after a minute. Turn pizza every 30 seconds starting at 2 minutes. Took pie out at 5 minutes. Kept it in longer than usual trying to give the peps some char. Let cool for 5 minutes on the rack. Drizzled with Mike’s hot honey!

Now what beer can we pair with this pie?
I have the hot honey off to the side and let people apply it per slice. Personally I add crushed red chili flakes and then sprinkle a little honey, about as much as you would when adding olive oil to a finished pie.
I use the flakes to elevate the heat so it doesn’t take a ton of honey. It can get quite sweet if you use it alone to achieve your desired heat levels, at least for me.

I’ve used Mike’s Hot honey about 3 years ago. I brought it to my companies attention last year, and now we feature it in 2 pizzas and as an add-on drizzle to your pizza. It’s become very popular in the last year. We think it’s best paired with just pepperoni, but our featured pizzas are;
Hot honey chicken and ultimate pepperoni. It’s just a drizzle on the pizza after it’s cooked, add to taste.
I recently heard about people putting spicy honey on their pepperoni pizza. Why? It seems bizarre to me. I’m not into spicy much, so I guess that’s why it’s foreign.
