Chicken Piccata Baked Meatballs:
recipe ingredients=
for the meatballs=
1 large egg
5 cloves minced garlic cloves
1tsp salt
1tsp black pepper
1tbls lemon zest
1 cup panko bread crumbs seasoned
1/3 c grated parmesan cheese
1/3 c minced parsley fresh
1 small onion minced
1lb of ground chicken, or veal. mix all ingredients in a bowl,add 3tabls of cold water or milk
to be certain the mixture remains tender &moist. also Do Not over mix ,it will make your meatball dense. (note) the recipe calls for the meatballs to bake for 15mins,but in my experience, I suggest you simply fry them in a fry pan on med for about 20 mins,then remove them to the side,and proceed to make the sauce.this will save a pan and a step and make for more flavor.leave the bits from frying in the pan after you set aside the meatballs.

The sauce :
add to your cooked in pan 1 new tablespoon of olive oil
3 cloves minced garlic
1/3 cup minced shallots. (note) I would use less next time it was too much for me, lol.
3tbls fresh squeezed lemon juice
1/2 cup white wine. I use Pino Grigio. If not, substitute with extra chicken broth
1 cup chicken stock
1/4 cup capers rinsed. You can leave these out if you don’t like capers, they are for flavor. If i had to pick a substitute, I would add 2tbls green olives chopped and a dash of their juice!
2tbls butter cubed
1 Tabls minced parsley for the end is optional.
INSTRUCTIONS:
now you add 1 Tabls of oil to the pan you fried in, add the shallots and cook on med 4 mins, then
add the garlic and cook for 2 more mins, watch it don’t burn, keep turning. Next add chicken broth, white wine, the lemon juice, and simmer for 5 mins. Now add back the meatballs to the pan sauce cook 5 mins more, add in butter stir in the capers, keep stirring and then season with salt and pepper to your taste, serve with noodles, pasta you like, or white rice and enjoy.
