So – I am in charge of the New Year’s Eve appetisers and decided to go with arancini (well – in fact, my GF suggested it).

I found three recipes for risotto and modified them to fit this method: https://www.seriouseats.com/arancini-rice-balls-recipe

We will have a seafood variant (in danish “jomfruhummer” – also known as spiny lobster it would seem), a spinach variant and a mushroom (and truffle) variant.

I would like a garnish and mayo with each – and here is where I need some input. These are my thoughts:

Spiny lobster arancini
Garnish: tail of the spiny lobster (shrimp size)
Mayo: ?? Not to intense, preferably red’ish!

Spinach arancini
Garnish: ?? Basil leaf?
Mayo: basil mayo

Mushroom arancini
Garnish: ?? A fried mushroom?
Mayo: truffle mayo with mushroom bits

Hit me with some suggestions for the question marks!

    For the lobster arancini, a lemon based mayo/aioli would be a nice accompaniment.
