Dry-aged prime rib 6.14 lbs using the same toaster oven as Kenji. I’ve had the roast in there only 2 hours @ 2:30 F and it’s already reading 110-115 inside. It should be said, I don’t have a very good thermometer so I don’t know whether to fully trust it, but fully cooked prime rib after only 2 hours is not possible, right? Am I probably just getting a reading of the outer portion? I’ve turned down the temp, I don’t want it to overcook. thank you!

    That looks like it’s been cooked at a much higher temp than 230F. All you can do is trust your thermometer (or get another) and proceed accordingly.

    If you know you are having issues with your thermometer I’d recommend getting a new one, that being said, 230F is a little high for the low cook temp for prime rib, for instance my oven gets as low as 150F tho mine took far longer than I would’ve wished (like 6 hours but I don’t remember how much it weighed, couldn’t have been more than 8lbs tho). However I did another one at a family’s place and theirs only went to 200 and at 9.5lbs it took about 3.5 hours.

    Make sure your thermometer is going into the very center of the roast if you want an accurate reading, if it’s still saying 115 then it’s probably 115, but remember, prime rib shouldn’t be served rare, it should be served a touch above medium rare to almost medium, I’d aim for the temp at 120-125 and allow it rise afterwards out of the oven, should finish rising around 135-140.

    Your thermometer should read 212 in boiling water – you could check to see if it’s accurate

    Two hours is too long. Look at the bone. Please tell me it’s not well done.

    Smaller toaster ovens tend to run way hotter than a traditional oven, I would trust the thermometer if it says it’s almost done

  9. What setting did you have the oven on? If you had the higher convection setting active it’ll cook differently than if this was on the bake setting.

    did you have convection on at 230? if so you shouldnt

    Shaking me head at all the people who spend $50+ on some meat but don’t have a good thermometer! Crime!
