I just got my first slow cooker for Christmas so I’m experimenting with different things! I struggle with time in the mornings and can’t make a big breakfast, so I wanted to try making a big batch of oatmeal I can eat all week. It turned out well, the texture was spot-on for my preferences. It definitely needs some flavor additions when serving, but this made a good base to build on and I can have different flavors every day.

Recipe:

1 cup steel-cut oats
1/4 cup chia seeds
1 can coconut milk
3.5 cups water
1/2 tsp vanilla
Salt (didn’t measure but probably a 1/2 tsp or so)

Cooked on low for 2 hours, then on warm for 6-7 more hours overnight.

    A small tip for steel cut oats, if you saute them in butter before cooking, you get a really amazing flavor! Might change the texture a tiny bit but not much, still gets mushy lol
