Chopped Salad Recipe
Salad For Two

So today I’m going to make a chicken salad and as you can hear my kid giving me a hard time as usual I’m going to give myself a little break and go ahead and buy fully cooked pre seasoned chicken breast it’s in the frozen aisle you can also use your own chicken recipe

But this is what I’m going with today so I’m also going to be adding some corn and I picked up some fresh ears of corn and I am going to cook these in the microwave a quick shout-out to my subscriber mark Neff thanks for the microwave idea and if you haven’t go

Check out my how to make Mexican Olympus I actually boiled some corn and roasted it but today it’s going in the microwave and the method that I’m using is one that I found on the YouTube channel food wishes that is actually a really cool YouTube channel they have a lot of good

Recipes on there so this method is basically put your corn in a microwave you’re going to cook it on high for 3 and 1/2 minutes and then after this is done I’ll show you how I remove and clean all the silk off of it it is so

Easy at this point the corn is really hot – just be careful and all I’m going to do is just put it onto a cutting board and I’m going to show you how I clean it and again this is the method that I saw on food wishes and it’s so

Convenient I don’t think I’ll ever make corn the same it’s really easy so what I’m going to do next is basically place my corn on the cutting board and you see one end has the silk sticking out and the other end is basically what I would call the

Bottom of the corn or it has that little handle that little knob at the end you’re just going to cut that which actually releases all the corn silk from the corn and now with your kitchen towel or paper towel you are going to just

Squeeze it out of the husk and as you do this it takes away all of the silk and it’s as easy as that Next I am going to be using my nonstick grill pan all I’m doing here is just lightly oiling it and now I’m just going to start grilling my fully cooked chicken remember it was frozen and I thought it in the refrigerator but I just want to heat it through and get

Some nice grill marks on it and with this salad you can most definitely use your own chicken breast recipe you can also use rotisserie chicken but I’m just giving myself a break with this I really need it I would like to give a quick shout out to my good friend

Nerissa I hope you liked this recipe and we got to catch up sometime now I’m just going to finish grilling my precooked chicken and then I’m going to toss on some red onion that is also going into the salad and you can eat your onion raw

But I want to go ahead and get a little char on that Now that I am done with all the grilling I am now going to remove the corn from the cob now if you do not have time or don’t have fresh corn on the cob you can most definitely use canned corn for this Now I’m just going to roughly chop my charred onion and again you can most definitely skip that step and just slice it raw or just leave it out if you’re not fond of onions this is going to be your salad when you make it top it with

Whatever you like but I’m just showing you a simple variation of a typical southwestern style salad and now I am also going to slice my grilled chicken okay now that that is done I’m moving on to the next ingredients I am using canned whole black beans you can make

Your own black beans but actually black beans in the can is really convenient I’m also going to be using grape tomatoes now if you don’t have grape tomatoes use whatever tomato you have so what I’m going to do to the black beans is actually drain all of the liquid and

Give them a rinse I want to make sure that they are rinsed the type of lettuce I’m using today will be romaine hearts you can use iceberg lettuce you can use a greener leafy err lettuce but that’s what I’m going with today and I’m going to be making salad

For two so I’m using my big bowl this is actually a fruit bowl that I purchased at a thrift store long long ago and I like to use it for parties when I’m plating salads or pasta salads but today I’m doing a salad for two and I’m going

To be using this bowl so all I’m going to do is roughly chop my romaine hearts and then I’m going to put the salad together For the salad I will be dressing it with an avocado cilantro ranch dressing and for that recipe I will put the video icon at the end of this video you can click on it and go straight there and as always all the ingredients and measurements will be located in the

Description box below I can’t wait to dig into this salad and I have to thank my friend Nerissa again for this wonderful recipe idea it’s so perfect for the summer I hope you give this recipe a try I hope you like it and thanks for watching

  7. Your best friends in the heat of summer are an outdoor grill and cooked, frozen chicken breasts. I hate heating up the kitchen so I modify my cooking, eating and purchasing habits for a few months each year. That silk removal method is pure genius….it's so annoying trying pick off all those silky strands that stick to the cob like glue.

  8. The McDonald's where I'm from served southwest salad. But sadly, they've discontinued the item. Now I have to learn to make it on my own 😭
