    Wanted to share this beauty with you!

    70% hydration dough fermented at room temperature during 24h, slightly cooked sauce, provolone, pepperoni, pepperoncini and some lacto-fermented biquinho peppers that were roasted with garlic. Cooked on a pizza stone in a 550f convection oven. I might go with a lower hydration next time for this style of pizza, but it is delicious nonetheless!

    Nice , I do a similar spicy pie with pep, banana peppers, kalamata, and hot sauce.
