One of my favorite high protein/nutrient dense meals!
– grilled shrimp
– sautéed bell peppers and red onions
– pan-roasted sweet potatoes (I do 30-40 minutes at 425)
– quinoa
^ combine all of the above when done cooking, and stir together with cilantro, sliced jalapeños, and fresh lime juice (I squeeze a whole lime on mine) and hot sauce of choice if you’re feeling spicy.
