Just finished my first box from hello fresh. My goal was to be vegetarian for the new year and so I got hellofresh to help me out and so far everything has been going pretty smooth! I’m on a 2 person plan, 4 meals a week. These are my ratings:

Vegan Curried Roasted Chickpea Bowl 4/4 ⭐:
Practically inhaled this meal it was so delicious and felt supppper healthy. I also was able to make 3 big bowls from this recipe, and was enough to feed me and a friend dinner with leftovers for lunch.

Black Bean Quesadilla 3/4 ⭐:
It was good, nothing to special.

Lemon Spaghetti with Brussel Sprouts 2/4 ⭐:
It just didn’t have a good flavor in my opinion. I love brussel sprouts but it wasn’t good in this pasta. The recipe did allow for 3 bowls to be made though

Harissa Sweet Potato Wraps 4/4 ⭐:
This was surprisingly sooo good. I’m not a lettuce wrap for any meal type of person but this was actually very fulling and satisfying for a dinner. Me and boyfriend were pleasantly surprised about how yummy it was. I was able to make 8 boats in total.

Overall week one was a hit. I already got my order for next week, and everything was fine except I was missing a can of enchilada sauce. They refunded me $5 so all’s well.

    Chickpea bowls are always good, I agree!

    The pasta is one of our faves, but we always add more lemon, garlic and onion, and also extra toasted panko! One thing with that recipe too is I think it helps to cook the Brussels sprouts longer than the recipe says to. They lose the bright green color, but the flavor is much better.

    Welcome! I started HF when I was a vegetarian too and was pretty happy with it.
