Let’s make a delicious vodka sauce. I made mine with penne for Penne Alla Vodka, but this great with other pastas like Gnocchi. This easy vodka sauce does not require many sauces and the ingredients it does need
are relatively cheap. Ingredients are below.

2 tbsp Extra Virgin Olive Oil

6 oz Tomato Paste
3 tbsp Vodka
1 cup Heavy Cream
2 tbsp unsalted butter
1/2 cup Parmesan cheese

A simple amazing creamy vodka sauce with penet also known as penet Olive Vodka let’s go get started here where we have our boiling water we are going to Salt this liberally cuz we’re actually going to use some of this pasta water for our sauce so do not toss it

All out until you save you’re going to to save about half a cup to 3/4 cup of pasta of pasta water and we’re going to go ahead we’re going to pour our pasta in this whole box of Panet and then we can start making our sauce all right so got a pretty good

Size pan here heating over what’s that medium high heat so we’re going to go ahead we’re going to put in a good about of olive oil it’s probably about 2 tablespoons worth ‘s the big spout we’re going to let that come up to temperature and then this is uh three cloves of

Garlic and then it’s a one and a half shallot so the recipe you’re going to see below um I’m actually going to make about 1 and 1/2x that so we do like this quite a bit but the proportions are easier if I just do it in one batch and

Then you can multiply or subtract from that okay so here go goes okay so oil has come up to temperature going to go ahead that’s our shallot and garlic this is the part where you have to be the most careful because you do not want to

Burn the garlic if you burn the garlic you got to start over so we’re going to let this brown up get a little aromatic here I’m going to turn the heat down just a little bit okay the next thing we’re going to be adding is one can of tomato paste so this is

Where it comes into um you’re going to see on the recipe it’s going to say 6 oz of tomato paste I’m actually going to use about 9 or 10 like I said we really like this so we make more than the re that I actually have okay so my garlic is starting to

Get a little bit golden brown there so ahead we’re going to add in this like I said 12 this is a 12 oz can of tomato paste we’re going to add in a little bit more than half of this just like that and then you want to cook this down

Down because you’re going to want to cook out the bitterness that comes in the taste of tomato paste so we’re going to cook this down so this is where I suggest grabbing a whisk it’s going to be much easier for you to try and combine all of this together

This will protect your garlic and shallot from getting any further Brown because it’s now combined with your tomato paste so while that is doing its thing we’re going to actually pull about 3/4 cup of so while that is cooking we’re going to pull about 3/4 cup of pasta

Water and that’s perfect set that off to the side because that’s going in next well it’s going in after our vodka actually so it’ll go in in Two Steps from here so next up vodka going to add about five to I’m using about five to six tablespoons recipe should be between three and

Four you’re going to let that cook off okay let that work in there now we’re going to use our pasta water I’m going to add that in just like that and then you’re going to carefully whisk this to combine it okay I’m going to turn this heat down just a little

Bit okay now we’re going to get our cream and this is what is going going to give the vodka sauce that signature orange look recipe down below is going to call for a cup can mention the recipe with the amounts will be down below in the description

Okay now I like to give it a quick taste see if it needs more cream or I think maybe just a little bit more not much just like that okay if you taste this and you taste like a little it’s a little tart um like the tomatoes haven’t cooked down fully you

Can add a little bit more cream but just before you get to this step you’re just going to make sure you cook them down enough um they’ll get to a brighter red color like you saw and that’s how you’re going to know it’s that they’re going to

Be they’re going to be at the sweet point and past any of the tar Point all right let’s check our pasta it’s almost done now this is where we start seasoning this so to start butter Parmesan cheese I’m going to wait to taste it for salt until after the parmesan cheese is mixed

In and the butter is melted and mixed in as well parmesan cheese is already pretty salty so we don’t want to overdo it but you’re most likely going to need to add some more salt just as it heads up okay so let’s go ahead we’ll season

It that butter just a little bit is left yep so definitely need some salt so give couple pretty good pinches there and pepper okay at this step instead of the pepper you can actually add in some red pepper to this and that would be awesome we’ve done that as well we’re just doing

Normal black ground pepper just to show you all how to make this okay another taste test here oh yeah that’s way better okay so we’re going to turn this on low now we’re going to take our penet and we are actually going to combine it right into the sauce carefully just like that
