I got the Final Fantasy XIV cookbook for Christmas and I decided to try the “Knights Bread”.

It is a yeasted bread using 1 part rye flour to 2 parts all-purpose flour, with dried basil for flavouring.

Fermented at room temperature for two hours, then in the fridge overnight (about 18-ish hours). Allowed to proof for 1.5 hours.

Baked in a preheated Dutch Oven at 220°C (475°F) for 25 minutes with the lid on, then an additional ten minutes with the lid off.

The crumb in the final product is relatively dense, but still very soft and springy. Personally, I am super stoked about this result, but of course I’d love to hear some feedback from people who do this more than I do.

    Honestly pretty good. Uniform crumb and it looks like you got some decent oven spring. Looks delicious!

    If I’m not wrong I think with the rye flour you would generally get a denser bread so for first try that’s actually amazing that you got an edible bread! Daijobu! Keep it up ✨
